Ah the classic Victoria sponge, enjoyed by royalty and the common man alike. This was a joint effort between siblings - still reveling in the glory that were her polo cup cakes, the wee sis decided to step it up and take on some serious baking. 'Bake off, bake off' I hear some of you cry... Then you clearly are unaware of the intensity of the Clark-sister bond. Together we are stronger.

A light and fluffy sponge complimented splendidly with the sweet cream and jam filling. I finished it before I even started my cup of tea. Hmmmm.
So good that they should change the name from Victoria to Anna & Sophie Sponge. 10/10

Anna was worried that this might be too hard, but how wrong she was.
It's spot on. I had the virgin slice, the best tasting of the lot. I feel lucky and privileged.
Well done Anna and Sophie. Lunch is on me.
P.S. Love the pic

This delectable classic certainly has gone down a treat, very good effort sister lady! However, I feel I should warn you against stray hairs in the cake mixture in future...hehe, much love! xxxxxxx

I can't comment as i haven't even been given a bit to try - even though i do the washing up, cake-cleaning and contribute to ingredient funding - but it does look yummy and the downloading of the picture looks like it was done by a pro.

I didn't realize that it was a joint effort! it was a real afternoon treat to have with my DC, mainly i enjoyed spooning out the cream with my fingers, but i'm just sick like that. Another winner from those talented Clark's. Your mother must be so proud.

awesome Victoria Sponge, tastes how it should do, possibly a touch on the heavy side, but no complaints, presentation 10 / 10 looks the part tastes the part, texture was not far off...9/10 allround!

Great cake, soft moist sponge with incredibly well whipped cream and a jam which was not to sweet. Truly wonderful. B

I have a baking related questions with regards to tarts - namely shortcrust pastry. Is this something which can be addressed on this website?
